I’m sad to see summer winding to a close, but I’m so happy for all the experiences I had. I actually had an amazing moment this morning and want to share it before diving into Sunday Social:

 

I woke up really early this morning, and since I couldn’t fall back asleep I decided to get up and go to the early service. The sermon was about how the Holy Spirit burns in our lives, hoping to set our hearts on fire for God. In the middle of this, the fire alarm went off and everyone had to evacuate. The entire church was searched, but no cause was found. We finished the sermon in the parking lot, knowing that God was announcing His presence and love for us.

What was your favorite trip/vacation/activity this summer?

 

My favorite trip this summer was to the Firefly Music Festival in Delaware! It was my first ever festival and it was an amazing experience. I saw 28 awesome bands in 3 days, made new friends, and had the greatest time. I will be going to music festivals every year for the rest of my life.







I also really loved just hanging out with friends and having wine nights or lake days. I’m lucky to have some really wonderful people in my life.

 

And last, but certainly not least, I loved going to Pittsburgh to help move my brother into his new apartment. His friends are awesome and I got to cook for them which I really enjoyed.




Favorite outfit look of the summer/clothing item?

 

I bought a super cute maxi dress for the festival and have been wearing it pretty much every week.







What is one thing you wish you had gotten to do this summer?

 

I wish I had gotten to go to the beach. Yes, for me the beach is the Jersey Shore. But I don’t go to Sleezeside or Belmar or Wildwood. I like the quieter areas, especially Spring Lake with the gorgeous beach mansions and cute shops. I also grew up going to my friend’s grandmother’s house on LBI and would have liked to do a trip down there.

Favorite movie/tv show of the summer?

 

I barely saw any movies this summer, which is a shame considering I get two free tickets every Tuesday. But my favorite show was definitely Pretty Little Liars. Can you believe that finale?! Crazy.

+ That some of my closest friends moved away. I’m determined to keep in touch.

+ That I didn’t really do any prep for school until about 15 minutes before I left for class

+ That instead of doing my laundry, I washed one pair of shorts, one top, and one bra to wear immediately

+ That I stayed up super late to finish a book and slept in until 9am

+ That I am completely dreading dog sitting next week

+ That I still haven’t paid my tuition for this semester

My current favorite link-up is Sunday Social with Neely and Ashley! Sunday is a great day for me to reflect and blog and I love the topics and questions each week. There’s also a lot of networking and new bloggy friends which is wonderful.

Definitely BlogHer. I wanted to go this year since it was in NYC, but the student passes sold out before I could get one. Maybe I’ll go next year if i can afford it!

What is the first website you log on to each day?
Twitter. And by first website I mean when I wake up at 3am every morning (because my brain hates me), I spend a good 30 minutes scrolling.

Anything with animals cracks me up. And Suri making fun of celebrity children is hilarious.
Pinterest or Facebook? Why?
Pinterest. It makes my OCD self happy (categorized visual bookmarks!!) and I’ve made a ton of awesome recipes I found on the site, most recently the amazingly delicious Chocolate Peanut Butter Awesome Bars!
Twitter or Instagram? Why?
Twitter! I enjoy it because it’s a lot more interactive than Instagram: I’ve made long-distance friends and had some amazing conversations while tweeting! PS you can follow me @ictine 🙂

This video reminds me sooo much of my own dog. It’s adorable and hilarious.

Biggest online pet peeve?
I hate when people complain constantly on twitter or facebook or their blogs. I know I’m guilty of complaining a little, but I always try to do it in a humorous way.

+ That I suck at blogging. I need to preschedule posts instead of thinking I’ll find time in my crazy life to do them.

In case you haven’t noticed, I’m pretttttty awesome at life and blogging. It figures that I would miss my own questions for Sunday Social, but I still have to answer them because they are about FOOD and I love to eat, cook, and explore new cuisine! I’ve been really good at actually making the recipes I pin this summer and I can’t wait to try yummy fall dishes.

If you could only eat one thing for the rest of your life, what would it be?
Guacamole. Or any chocolate-peanut butter combinations. Preferably not together. Although that would make either be an awesome or disgusting sandwich.
What’s your guilty pleasure/comfort food?
Lately I haven’t been able to stop eating Nilla Wafers. Homemade baked macaroni and cheese, chicken tacos, red velvet cake with cream cheese frosting, and pints of Haagen Dazs. My favorite flavor of ice cream EVER was their Midnight Cookies and Cream (cookies and cream, but with chocolate ice cream. So simple, yet so amazing) except it was a Limited Edition flavor and now it’s gone forever and that makes me sad all day.
What’s the weirdest/craziest thing you’ve ever eaten?
I had escargot when I was 9. I also ate raw baby squid recently at a sushi place. The escargot wasn’t bad, very chicken-like. The texture of the baby squid freaked me out.
What foods do you avoid at all costs?
Raw tomatoes, mushrooms. I don’t really like coffee. I haven’t eaten beef or pork for ten years (kind of like a half-vegetarian). I’ve been working on eating less chicken/turkey/fish as well and now I consider myself to be a flexitarian. I would also never ever touch veal, duck, lamb, etc.
What meal reminds you of your childhood?
My mom makes a chicken and stuffing casserole that she got from some family friends. The first time I had it I was 5 or 6, so I’ve grown up with it. Also, things like peanut butter and jelly and goldfish dipped in yogurt since they were my typical school lunches.
Share one of your favorite recipes and the story behind it.
My best friend and I decided to have a date night: we went to the grocery store, picked up random ingredients, and created a recipe. We’re still trying to find an awesome name for it, but basically it is chicken sauteed in white wine topped with roasted peppers, arugula, and fresh mozzarella. It’s so good on its own or served over pasta! It means a lot to me because we created it together and had so much fun doing it. We ran around the kitchen playing old Italian music and drinking wine while sautéing things. It was amazing.
Recipe:
1-2 thin chicken breasts per person (I buy big ones and slice in half lengthwise)
Dry white wine (Chardonnay works well)
Olive oil
Roasted red peppers (make your own or buy them jarred)
Fresh arugula
Fresh mozzarella
Fresh parsley
2 clove fresh garlic, chopped
Garlic powder
Fresh lemon juice
Salt
Pepper
Oregano
1. Prepare chicken breasts. Lay out on cutting board and season each side with parsley, salt, pepper, and oregano.
2. Add olive oil to two pans: one large and one small. Enough oil to cover pan and have a little left extra.
3. Heat both pans on medium
4. Add chicken breasts to large pan and arugula to small pan.
5. Let chicken cook until light brown on bottom
6. While chicken cooks, stir arugula until well coated with oil. Add half of chopped garlic, a couple dashes of garlic powder, pepper, and lemon juice. Reduce heat to low.
7. Flip half-cooked chicken breasts and reduce heat to medium-low. Add wine to pan.
8. Allow chicken to simmer in wine until fully cooked. Top each breast with roasted red pepper and a slice of fresh mozzarella and allow mozzarella to melt.
9. Plate chicken breasts. Top with the arugula and the remaining wine sauce. Serve.

What is your favorite Fall activity?
I love Fall, so there are wayyy too many for me to choose from! I love apple picking with friends and then baking delicious apple things. I like taking my dog for walks in the cool afternoons and jumping in piles of leaves. The farmer’s market is a must. And I’m addicted to all things pumpkin. Pretty much anything that involves food.
Do you follow a football team? if so which one and why?
Right now, my number one boys are Alabama. Yes, I’m really random. I have no connection to U of Alabama. I just love them. Although I have been to Alabama once, so I guess that counts. On the professional side, I’ve been an Eagles fan since I was 12 because I refused to be a typical North Jerseyan and root for the Giants. I’m also partial to the Saints since half of my family is from New Orleans.
What is something fun about Fall in your area?
We have a lot of great pick your own apple farms. Also being close to the city means seeing all the new fall shows.
Fav Fall outfit staples?
A cute dress. Military jacket. Gray lace leggings. Lots of boots. Cozy sweaters.
Thing you are looking forward to most about this coming Fall season?
Alabama football. Trying out new fall recipes.
Favorite Fall holiday? Traditions?
Post Columbus Day. Yes, it’s a holiday. My best friend and I made it up.
